Poached apricots make a delicious and nutritious dessert for your toddler or child.
1 tbsp manuka/runny honeyFirstly, half and quarter the fruit, getting rid of the stones. Put the sugar, ginger and water into a saucepan and heat until the sugar has dissolved. Add the fruit and simmer gently, making sure that the pan is covered. Do this for about ten minutes , stirring once, until tender .
Allow the fruit to cool slightly and then place in a serving dish/bowl.
Next, toast the wheatgerm (available from some supermarkets and health food stores)in a dry frying pan on a low heat for about 30 seconds, shaking the pan often. Allow to cool for a moment and then mix into the yoghurt along with the honey.
Spoon over the fruit and serve or alternatively chill before serving.
