Mini Strawberry Sundaes




Your toddler won't turn down a strawberry sundae!

PREPARATION- Takes 15 minutes, plus chilling time in the fridge.

  • 1/2 pint/300ml of water
  • 135 grams/4.5 ounces of strawberry jelly
  • 250 grams/8 ounces fresh strawberries
  • 200 grams/7 ounces fromage frais (any flavour will do)
  • 1 tbsp caster sugar (optional)

    Firstly, cut the jelly into pieces using some scissors. Supermarkets now sell reduced sugar versions and jelly that is now completely free of artificial colours and flavours. Fantastic!

    Place them into a large measuring jug. Next, pour 1/2 pint/300ml of boiling water over the jelly and mix with a metal spoon until it has completely dissolved and melted. Leave it to cool.

    Wash and de-stalk the strawberries. You can either blend them in a food processor or mash them in a bowl with a fork.

    Mix in the strawberries, the fromage frais and your tablespoon of caster sugar (if using) into the jelly and stir until smooth.

    Pour your mixture into four individual mini jelly molds and chill in the fridge for at least four hours until completely set.

    When you are ready to turn out your sundaes, dip each mold into some hot water. Loosen the edges with your fingertips and place the mold onto a plate. Hold the plate and mold together and jerk the mold to release the jelly.

    To serve, top each sundae with a fresh strawberry. This recipe makes 4 servings.

    They will keep for anything up to three days in the fridge in an airtight container.
