Parsnip And Sweet Potato Mash

Parsnip and sweet potato mash makes a delicious combination!

PREPARATION- Takes 25 minutes

  • 1 medium parsnip
  • 1 small sweet potato
  • 1/4 red onion
  • 1 clove of garlic
  • olive oil
  • butter
  • 1-2 tbsp semi skimmed milk/goats milk

    Firstly, chop and dice the red onion. Next, peel and slice thevegetables and place into a saucepan of boiling water with a dash of olive oil. Cook for around 20 minutes or until soft. Take off the heat and drain.

    Chop the garlic into very small pieces or use a garlic crusher. Heat a small amount of olive oil in a pan and cook the garlic and onion for around 2-3 minutes on a low heat, be careful not to burn. (You may want to cook the onion for a little longer so it is softer).

    Mash the vegetables with a tiny knob of butter and add the milk, onion and garlic. Heat for a further 2 minutes, stirring until soft and creamy. Allow to cool and serve with a little pepper if desired.

    Makes 2-3 servings. You can make this recipe without the garlic, it will just have less taste.

    Will keep well in the fridge for up to 48 hours in an airtight container, just add a little milk when you are reheating.
